| Preparation Instructions | Machine Mixing: Pour 5 ½ Quarts Water Into A 12 Or 60-Qt. Mixing Bowl; Add Tortilla Mix. Mix With A Dough Hook 1 Minute At Low Speed (1); Then 4 Minutes More On Medium Speed (2). Hand Mixing: Use A Sturdy Spoon Or Your Hands, Mix Until Dough Forms A Ball; Knead 5 Minutes On Lightly Floured Surface. Cover Dough And Let Rest 15 To 30 Minutes. Shape Into 1 1/2 Ounce Balls. Cover With A Damp Towel To Prevent Drying; Let Rest 30 Minutes To 1 Hour. Preheat Ungreased Griddle To 400°F To 425°F. Roll Out On Floured Surface Or Press In A Tortilla Press To A 6 Or 7 Inch Circle. Cook 1 To 2 Minutes On Each Side. |
