Preparation Instructions | Small Batch: 5 Lbs. Base 1 Lb. 12 Ozs. Eggs 1 Lb. 8 Ozs. Oil 1 Lb. 2 Ozs. Water Large Batch: 50 Lbs. Base 17 Lbs. 8 Ozs. Eggs 15 Lbs. Oil 11 Lbs. 4 Ozs. Water Handling: 1. Combine Base And Eggs; Mix For 1 Minute On Low Speed And Then 3 Minutes On Medium Speed. 2. Add Oil And Water And Mix 1 Minute On Low Speed. 3. Scrape Down; Mix Another 2 Minutes On Low Speed. 4. Deposit Into Prepared Pans. 5. Garnish As Desired. Baking: Standard Oven: Bake At 350 - 375 Degrees F For About 35 Minutes Or Until Done. Convection Oven: Bake At 325 - 350 Degrees F With Low Fan For 30 - 35 Minutes Or Until Done.
