Idahoan Foods BBQ Mashed Potato Bowl
Perfect for a summer cookout or a cozy winter meal, this recipe is sure to put a smile on your face. This easy to make recipe will surely become a hit with whoever you serve this to.
Ingredients
Potatoes
- 1 bag (26 ounces) Honest Earth® Rustic Mashed Potatoes (prepared according to hot water instructions)
OR 1 Idahoan Buttery Homestyle Mashed Cup per person - 1 gallon hot water (water should be between 180°F to 190°F)
Toppings
(Toppings below are recommendations. Get creative to suit your taste!)
- 2¾ pounds diced cooked chicken (keep hot for assembly)
- 1 pound shredded cheddar cheese
- 1 pound black beans (cooked and drained, held for assembly)
- 2 pounds corn relish
- 1 quart barbeque sauce (keep warm for assembly)
- 6 ounces fresh jalapeño (sliced thin, held for assembly)
- 6 ounces red onion (finely diced, held for assembly)
Instructions
For Family Style:
- Prepare meat and additional toppings. Be sure to keep warm for assembly.
- Measure 1 gallon hot, not boiling, water into a large bowl.
- Add entire pouch of potatoes all at once, using a wire whip to distribute evenly and wet all potatoes. Let stand 1 minute until the potatoes are fully hydrated.
- To assemble, place mashed potatoes into the bowl and top with 3 ounces of chicken, 1 ounce of cheese, 1 ounce of black beans, and 2 ounces of corn relish.
- Drizzle 2 ounces of barbecue sauce over the dish and garnish with thin sliced jalapeño and diced red onion.
For Individual Cups:
- Prepare meat and additional toppings. Be sure to keep warm for assembly.
- Prepare Single Serve Cup per instructions on the package.
- To assemble, top Single Serve Cup with desired amount of chicken, cheese, black beans, and corn relish.
- Drizzle barbecue sauce over the dish and garnish with thin sliced jalapeño and diced red onion.
